Taught by his father in Albania, Richi Borici learned to cook at the tender age of 9. Richi immigrated to America in 1996, bringing with him the love of his regional Mediterranean cuisine. Richi arrived in Brooklyn, New York, and started painting houses to earn money while he stayed with his family.
Richi's Uncle owns Ray's Pizza in New York and his family owns most of the Rays Pizza locations here in Arizona. He started in the business in New York and for 16 years did "Painting and pizza."
Richi eventually moved to Arizona to join his uncle and work at the Rays on 7th street and Bell Road in Phoenix. He spoke no English when he moved to Arizona and taught himself the language, communicating with his customers through hand gestures, trial, and error.
As the climate and reputation for good food and great portions for a fair price grew beyond the scope of the original Nick's Diner, expansion became necessary. A change in ownership percentage also occurred and Richi's Diner was born.
